15 min high protein dinner - chicken egg wrap

Short on time but wanting a high protein low carb dinner? This will be your fix.



Ingredients:

1 serving of chicken breast

2 eggs

Cheese

1 vietnamese rice paper

a handful of salad leaves

a handful of fruits of choice



Steps:

  1. cook the chicken breast on medium heat and sear both sides for 1 minute. Add some water to the pan and turn the heat down and simmer it for another 5-6 mins.

  2. In a low heat pan, place the rice paper and crack two eggs on top. Spread the eggs evenly on the rice paper and let it cook for 1-2 minutes. Add in the chicken breast and some cheese and fold the sides into the centre. Use the spatula to press it down and make sure its securely sealed.

  3. Add some water to the pan to create a steam and ensure the rice paper has been cooked thoroughly.

  4. Assemble it on a plate and enjoy!
