peanut sesame mochi bagel 花生芝麻湯圓貝果

Ingredients for 6 bagels


Bread dough:

300g bread flour

3g yeast

20g sugar

150g lukewarm water


Peanut filling:

25g peanut butter powder

10g coconut oil/ any oil of choice

15g water

20g honey


Sesame filling:

25g black sesame powder

20g honey

A pinch of water


Mochi:

50g glutinous rice flour

35g hot water

20g sugar


Water to boil the bagels:

500ml water

50g sugar

3g baking soda


Steps:

  1. Make the bread dough. Mix everything together until a dough comes together. Knead it for 8-10 minutes until the surface is smooth. Let it sit in room temperature until doubled in size.

  2. Make the peanut and sesame filling. Mix everything together until paste like and put it in the fridge for 15-20 minutes to slightly harden it.

  3. Make the mochi. Mix everything together until no lumps and steam it for 10 mintues until it becomes transclucent. Add in some coconnut oil and mix until it becomes sticky and form it into a ball

  4. Divide the dough into 8 equal pieces (65g each). Flatten it out and roll it into a ball and let it sit for another 15-20 minutes. Cover with cling film to prevent it from drying out.

  5. Roll the dough into a rectangular square and place the filling. Roll it along the short edge and make it into a bagel shape.

  6. Repeat with the remaining dough and let the shaped bagel have a second rise for 30 minutes.

  7. Prepare the water for boiling the bagels. Add the sugar and baking soda to the water and let it come to a boil. Reduce the heat to low fire and boil the bagels for 1 minutes each side. Place the bagel on the parchment paper

  8. Preheat the oven to 200 degrees celcius and bake for 20 minutes. Rotate the tray if needed.

  9. Remove from the oven and let it cool down on the rack. Enjoy!
