Black miso chocolate banana bread

My twist on the classic banana bread. Umami from the black miso just elevates everything✨


Ingredients:

2 ripe bananas, mashed

2 eggs, room temperature

50g brown sugar

60g vegetable oil

50g milk

1tsp black miso

200g cake flour, sifted

3g baking powder

1g baking soda

a pinch of salt

dark chocolate chunks and chips


Steps:

  1. preheat the oven to 180 degrees celcius.

  2. mash the bananas and crack in two eggs. Mix until foamy and add in the sugar, oil, milk and black miso and mix until combined.

  3. add in the flour, baking powder, baking soda and salt and mix until 90% combined. its okay to have big lumps.

  4. Pour in half of the batter into the tin and add in some dark chocolate chunks. Add the remaining batter and top it off with some dark chocolate chips and crushed walnuts.

  5. bake at 180 degrees celcius for 45 minutes. Remove the cake from the tin and let it cool completely before slicing. Enjoy!
