Cookie Vission make over- Lava matcha almond cookie with white chocolate


Brought home a matcha macadamia cookie from Cookie Vission for my sister and we are HOOKED! And here is a homemade version so you could skip the queue and enjoy it at home :p

Ingredients for 4 huge cookies:

65g Light brown sugar

35g white sugar

65g unsalted butter, melted

2g vanilla extract

1 beaten egg (roughly 40g)

130g cake flour

4g baking powder

2g baking soda

3g salt

40g white chocolate chip

20g almond flakes


Matcha chocolate ganache

7g matcha powder

50g white chocolate chips

20g Whipping cream


Steps:

  1. Mix in the sugar in the cooled melted butter until the sugar has slightly dissolved. Add in the beaten egg and combine well.

  2. Sift in the cake flour, baking powder, baking soda and salt, and fold in until just combined.

  3. Add in the white chocolate chips and almond flakes into the cookie dough, and place it in the fridge for at least four hours, or overnight.

  4. For the matcha ganache, cook the whipping cream on low heat and add in the matcha powder. Whisk until no visible clumps. Melt the white chocolate chips in the same pan on low heat and gently stir everything until a smooth yet thick paste is formed. Place the matcha chocolate ganache in a plastic container and freeze it overnight.

  5. Divide the cookie dough into four equal pieces, flatten it and place 8-10g of matcha ganache in the middle of the dough. Roll the dough into a ball shape and make sure you have pinched the edges so the filling won’t burst out when baking.

  6. Preheat the oven to 180 degrees, and bake the cookies for 12-15 minutes, or until slightly golden brown. It may seem underbake but don’t worry!! It will harden up a bit when it is completely cooled. Enjoy with a cuppa tea, coffee, or matcha, anything you like coz I assure you cookie goes well with EVERYTHING. Proof me wrong :D

Afterthought: I should experiment with a ceremonial grade matcha, or adding some matcha oil for a more vibrant colour and intense flavour. Anyhoo, I will treat this as a successful trial teehee what should I bake next?
