This recipe is inspired by the Australian Damper bread and you just need 6 home staples to make this bread under 45 minutes! The texture of this bread is on the soft and cakey side, so if you love the texture of banana bread you will love this one too!
Ingredients:
300g bread flour
15g baking powder
10g maple syrup
5g salt
280g plant-based milk
35g oil
Steps:
Preheat the oven to 200 degrees and line your loaf pan with parchment paper
Sieve the dry ingredients together and whisk it thoroughly
Add in the wet ingredients and mix really quickly as the baking powder will activate once in contact with water. Stir until the dough comes together. It should look like a banana bread consistency.
Pour the batter into the loaf pan and bake it for 25 minutes at 200 degrees and 175 degrees for 15 minutes more. Use a skewer to check whether the bread has cooked thoroughly.
Let it cool completely on a cooling rack before slicing and top it off with your favourite topping (mines always peanut butter and banana) and enjoy x
This bread is really versatile and you can make it into different flavours like cinnamon raisin, garlic salt with rosemary etc.. just play around with different flavour profile and I guess that's the joy of baking right? :>
Tips:
If the bread is browning too much mid way, place a foil on top and continue to bake it
Look at the bread, not the time!! Since each oven’s specs are different, it is important make judgement based on the outlook instead of the remaining baking time. You will get hold of it with practise and trial and error x
