Ingredients for 6 cookies:
55g unsalted butter, melted
50g light brown sugar, packed
20g granulated white sugar
1 egg at room temperature
2g vanilla extract
60g runny unsweetened peanut butter
60g cake flour
2g baking soda
2g salt
A handful of mini marshmallows and chocolate chip
Steps:
1. Melt the butter in a pan and let it cool down. Then add into the brown and white sugar and mix until slightly dissolved.
2. Add in the egg and peanut butter respectively until a slimy mixture is formed.
3. Add in the baking soda, salt and vanilla extract and mix until combined. Fold in the flour until incorporated and toss in the marshmallow and chocolate chip.
4. Place the dough the fridge for at least 2 hours (or overnight) and bake the cookies at 175 degrees for 10-12 minutes (or until golden brown)
5. Let cool at room temperature and enjoy!! ** it may come out looking soft but trust me let it cool down a bit and u will have a crunchy on the outside chewy on the inside kind of cookie!!
